Easy Mongolian Chicken Stir Fry

Ingredients
- Sauce:
- 2 Tablespoons oyster sauce
- 1 Tablespoon soy sauce
- 1 Tablespoon brown sugar
- ½ teaspoon sesame oil
- ¼ teaspoon freshly ground black pepper
- ¼ cup water
- 1 teaspoon sambal or chili paste with garlic (optional)
- For the chicken:
- 1 pound boneless, skinless chicken breasts (I use thin filets), cut into bite sized pieces
- ½ teaspoon rice wine
- ½ teaspoon soy sauce
- 3 cloves garlic, minced
- 1 teaspoon prepared ginger (comes in a tube
- ¼ cup arrowroot (can use cornstarch if you prefer)
- 1 tablespoon avocado oil
- ½ Red bell pepper, thinly sliced
- 3 green onions, cut into ½ inch pieces
Directions
- In a bowl, whisk together all the ingredients for the sauce.
- Coat the chicken with the arrowroot and set aside.
- In a small bow, mix the rice wine, soy sauce, garlic and ginger.
- Pour over the chicken. Let it marinate (at least 15 minutes) while you prepare the other ingredients.
- Heat oil in a wok or skillet over medium-high heat, and then add the chicken. Stir fry until browned.
- Pour in the sauce and mix well.
- Add the bell peppers and cook until softened but still crisp.
- Top with chopped green onions and serve over rice.
This is exactly what I wanted to eat after all the hustle and bustle of the holidays. All the lavish dishes and desserts left me wanting my all time favorite cuisine. Plus the fact that I wanted to give a twist to the traditional Mongolian Beef and try it with chicken instead.
I have just a tad bit more celebrating to do it 2015. My birthday is in a couple of days and then there is New Year’s celebrations. After that I am embarking on a weight loss challenge for 6 to 12 weeks.
