Ingredients
- ¼ cup coconut & peanut spread (I used Earth Balance)
- 3 Tablespoons honey
- 1 scoop Protein Powder (I used Designer Whey Vanilla)
- 2 Tablespoons Ground Flax Seed (I used Spectrum)
Directions
- Combine all ingredient in your stand mixer.
- Using the paddle attachment mix until smooth
- Roll into balls
- Refrigerate until ready to eat
By far my favorite of all the energy bites I made in the last month. I found this new peanut butter that’s made with coconut oil. It was so delicious I could eat it right out of the jar. But don’t worry, I didn’t. Well not the whole jar anyway.
As a matter of fact, both the baby girl and her boyfriend were eyeing that same jar of peanut butter. I could tell they were going to snatch it up. Luckily I got to it before them and made these delightful energy bites. The perfect energy boost right before my workout.
And as long as you don’t tell anyone, I may have snapped a few on my way out the door as I was heading for work the other morning.
